This Fall, I have been trying to cook more home-cooked meals for my little clan and eat-out less.  That’s tricky when I get slammed during the fall season with lots of sessions and orders but so far, I’ve done pretty well.  One of my fall favorites is Maple-Baked Apple Chicken.  Just saying the name makes me feel like I’m cooking a culinary masterpiece.  Best of all, it’s super easy & fast and my husband loves it.

4 small boneless skinless chicken breast halves (1 lb.)

1/2 cup  sliced onions

2 red cooking apples, sliced

1/2 cup  maple-flavored or pancake syrup

1/3 cup KRAFT Zesty Italian Dressing

PREHEAT oven to 350°F. Spray large ovenproof nonstick skillet with cooking spray. Heat on medium-high heat. Add chicken; cook 3 min. on each side or until lightly browned on both sides. Remove from heat.

PLACE onions on top of chicken; surround with apple slices. Mix syrup and dressing; pour over chicken.

BAKE 20 to 25 min. or until chicken is cooked through (165ºF). Spoon syrup mixture in skillet over chicken just before serving.
