{The best crock pot meal known to Mom}

This weekend, we are having a Dinner party and I’ll  be making this amazing crock pot meal that is so good you wouldn’t even know it’s made in a crock pot!  Why is it good? I’m thinking it’s the pint of whipping cream. he.he.
Every time I make it people ask me for the recipe so I thought I’d share it here:

Tomato Chicken Fettuccini

  • 3 chicken breasts (I used frozen, & it worked fine)
  • 2 cans stewed tomatoes
1 bunch green onions, chopped
  • 1 t. oregano
  • 1 t. basil
  • 2 cloves minced garlic

*You could probably add artichoke hearts, sliced mushrooms, or whatever else sounds good too.

Put all above ingredients in a crockpot on low for 8 – 10 hours.

Combine in separate bowl:

  • 1 pint whipping cream
  • 3 eggs
  • 1-2 c. parmesan cheese.

Pour in crockpot for last hour of cooking.

Serve over fettucini noodles.
YUMMY!

I’m guessing the stewed tomatoes are NOT drained? I’m totally making this… like tomorrow. 🙂

No, don’t drain them. You can also used diced tomatoes if you don’t like the texture of stewed (which is what I do).
