What are YOU making for breakfast on Christmas morning?

When we stayed overnight at The Curtis hotel in downtown Denver for my birthday, we ate the MOST amazing breakfast in the hotel restaurant called “The Corner Office”. It was blueberry cheesecake waffles with graham cracker syrup.  SOOOOOOOOO amazing! I found a similar recipe and am off to venture the grocery store on Christmas Eve so we can have these on Christmas morning.  They are THAT good! Thought I’d share it with you too.  MERRY CHRISTMAS!

Blueberry Cheesecake Waffles

Ingredients

THE RECIPE FOR THE CHEESECAKE FILLING

GRAHAM CRACKER MAPLE SYRUP

Directions

    For the waffle you can use any Belgium waffle batter recipe, feel free to use your favorite! The most important part of the waffle is the cheesecake filling.

    Whip together all of the Cheesecake filling ingredients, except the blueberries. When assembling the waffle fold the blueberries into the filling.

    For the syrup: Mix together until well blended

    Place one Belgium style waffle down on a 12″ plate, fill the waffle with heated cheesecake waffle filling.

    Place one more waffle on top, and dust with powdered sugar, and serve with whipped butter and graham cracker maple syrup.

    MMmmm, that sounds delicious! I’ll have to try that recipe. I made a hash brown and ham casserola the night before and popped it in the oven while we opened presents in the morning. It was ready the moment we were done with presents. It was very similar to funeral potatoes.
